The crunchy topping on this side-dish casserole gives way to a cheesy interior, resulting in a comfort food winner. A bonus with this dish is that you can make the casserole ahead--assemble and refrigerate it until time to bake. Sprinkle the cornflakes over the casserole just before baking.
1 1/2 cups fat-free sour cream 1 1/4 cups (5 ounces) finely shredded reduced-fat sharp cheddar cheese 1/2 cup fat-free, less-sodium chicken broth 2 tablespoons minced fresh onion 5 teaspoons butter, melted 1/2 teaspoon freshly ground black pepper 1/4 teaspoon salt 1/8 teaspoon ground red pepper 1 (30-ounce) package frozen hash browns, thawed (such as Ore-Ida) 1 (10.75-ounce) can reduced-fat cream of chicken soup (such as Campbell's Healthy Request) Cooking spray 1 cup coarsely crushed cornflakes 2 tablespoons chopped fresh parsley
Preheat oven to 350°. Combine first 10 ingredients in a large bowl; spread evenly into a 13 x 9-inch baking dish coated with cooking spray. Sprinkle cornflakes over potato mixture.
Bake at 350° for 1 hour or until bubbly. Sprinkle with fresh parsley.

The only problem I see with potato salad is that she was looking for a recipe for a preschool party. I still can't get my TEENS to eat potato salad.
Edited because I re-read the post... Sorry I don't usually equate 'potato salad' with olive oil and salt/pepper... I thought you meant potato salad as in the picnic side dish.
Fast and easy would be a basic potato salad? Just boil potatoes skin on and cut into bite-sized cubes
Leave to cool and coat with olive oil salt and pepper..
That is it simple, quick and easy!!

Thanks TRILLIANTOO! I'm sure you could reduce the butter or even leave it off entirely. The potatoes are essentially 'steam cooked'. I often also add a few slices of sweet potato on one side of the dish for myself (although I usually peel the sweet potato as I'm not as big a fan of the skin on those) and I don't usually add any dots of Smart Balance to those.

I'm wondering if you used Dutch Baby Yellow potatoes if you could use less butter because they taste buttery just by themselves.

For something REALLY fast and easy ... spray a 9x11 glass baking dish with cooking spray. Wash and slice several Yukon gold potatoes (Red Skin potatoes work well for this too) and layer them in the baking dish. For my family, I sprinkle about 1/4 cup finally chopped onion over all the potatoes (for preschoolers you might want to leave these out). Dot with a few teaspoons of whatever spread you use - for us it's Smart Balance. Stretch Saran Wrap over the baking dish - pulling tight to seal - no air holes. Microwave for 10 minutes for a full baking dish - a little less if you've only got a thin layer in there. Be careful taking off the Saran Wrap - the steam will be hot.

How about duchess potatoes... looks cute and impressive, but basically just seasoned mashed potato shaped nicely!
Here is my family's favorite potato dish of all time. My kids request it for their birthdays, and we have it all the time in the summer when we can grill it!
I use small red potatoes, about 2-3 per person, depending on size. I clean them and then cut them into approx. 1 in chunks. I drizzle them with a little olive oil, and then add fresh herbs, parsley and chives are my favorites, but rosemary is also nice, as is thyme. I mix up the potatoes to evenly distribute the oil and herbs and then bake (or grill) at around 375 degrees for 20 minutes to a half hour. Yum!!!!!!!!!!!!!!!

I like to make baked fries. I prefer mine with either garlic and rosemary or spicy with thai hot sauce. You just cut them, add a little olive oil and dip them in the herbs or sprinkle them with the herbs, and then bake at 350 until done, usually about 25-30 minutes. You could also make some type of mashed potato.

My son just brought home a paper from preschool that says we need to bring a potato side dish to his Christmas program next week. The only real side dishes I know with potatoes are hash brown casserole and German potato salad. Any other ideas? Preferably something fairly easy and fairly cheap!
