Barley is wonderful and well worth giving a try. I like to cook mine in chicken broth/stock with a little chopped onion, celery and garlic. You need to use more liquid than you would for say rice. I think for 1 cup of barley it should be about 2 1/2 cups of liquid. And it needs to cook longer, probably 45 - 60 minutes. But it is definitely worth it! And adding it to soup - YUM!

I agree with RANZEJINI. Pasta isn't bad for you, but it's the amount of pasta & what you're eating with it that can be problematic.

I've been trying to expand my horizons by trying different types of grains, like couscous, quinoa, and different kinds of rice. A friend suggested barley which I have not tried yet. So there are also lots of options besides pasta, although naturally you always have to keep your portions in control!

Well, it all depends on the amount, and if its made with white flower or whole grain flower. Whole grain is obviously better for you, and you only need half a cup of noodles if I recall correctly...
