This makes a lot ! Leftovers are great for lunch too.
Pasta w/fresh tomato and basil
1 pound your favorite shape pasta 4 tablespoons olive oil - more if you like 3 cloves crushed garlic 1 small onion, finely chopped 2 cups diced tomatoes 8 leaves fresh basil, torn or more if you like Parmesan cheese salt and pepper to taste
Cook pasta to box directions.
While pasta is cooking combine olive oil, garlic, onion, tomatoes and saute for about 8 minutes on medium/low heat , add the basil leaves and cook 2 minutes more.
Toss the warm pasta with the tomato mixture and sprinkle on salt and pepper and parmesan cheese.
***you can change this up a bit and add some grilled chicken***

This is a really good recipe. You can use fresh chopped tomatoes rather than a can of diced tomatoes.
