Thank you everyone! Really appreciate the advice/book suggestions. :-) Now to investigate a different lifestyle. Scary with a hubby who really is not that excited about going gluten-free much less grain-free! He'll survive.
You're right: grains are NOT the health foods we're led to believe. Wheat is probably the worst of them - and "whole grain" is the worst of the worst, since the bran layer is where most of the things we react to reside. If you're gluten-sensitive, you may well be cross-reactive with ALL grains.
The difficult thing for most people to understand is that it's not simply a digestive reaction. If you're "allergic" to seafood, you're going to react digestively as well as systemically to eating it. With grains, you may experience no distress whatsoever in eating it... your body reacts metabolically to it instead. As has been mentioned, sinus issues are common.
I love cheese and dairy too much to go Paleo. We do eat Primal, however, which is similar. Abstinence from wheat and grains is a form of low-carb, since grains are, in large part, carbs. Our diet is restricted-carb and Primal on order of our endocrinologist. It's been a great improvement to our overall health.
For good support and experience, check out the Wheat Belly and Atkins forums here on SP. Wheat Belly, especially, is for those who've adopted the wheat-free lifestyle as described in the book of the same name. It's a very good resource, too. You may be able to find it in your local library (if the wait list isn't too long!), or it's available on Amazon. Well worth the price.

I am also gluten sensitive - don't have rosacea but have noticed that I'm not as bloated or congested as long as I'm gluten free. I'm working on Paleo but am struggling with giving up the cheese! You might also check out the list of Spark Teams - I believe there are some Paleo ones.
I'm currently gluten-free to support my boy who is gluten sensitive. I've noticed that I am also a bit gluten sensitive. Since going gluten-free, my rosacea has cleared up almost completely and only flares when I have a slip and I've noticed that I have a lot less mucus production (yuck, I know) which makes me wonder about internally. After giving it some thought, I'd like to see about going the way of Paleo and Grain-free and seeing what kinds of improvements I can see from that. Anyone have any tips or experience to share about the two? Thanks!
