There are some veggies though (like spinach) that you can get MORE nutrients out of when they're broken down by cooking. Kind of like getting more bang for your buck using a small amount of full-fat dressing on a salad.
I would say eat raw what you can, or just try one piece of whatever raw and work your way up to it.

I read an article recently about raw and cooked vegetables. One thing, as I recall, the article pointed out is that when we consume raw vegetables, the stomach acid basically does to them the same thing cooking does, so that we are essentially getting the same benefits, cooked or uncooked. I don't know if that applies to overcooking, though.

You aren't losing all the nutrients, but you are definitely reducing them.

As long as you cook them in minimal amounts of water, I think you're ok. Also if you're worried about losing nutrients, drink the puddle of water that's left over when they're done cooking.
I microwave veggies all the time. I really like those "steam fresh" bags you get in the freezer section of the supermarket. They are ultra convenient and I think they usually come out cooked perfectly.

I tend to over cook my vegetables because I'm not a big fan of raw and I like mine a little more tender. Am I losing all the nutrients when I do that? Also for convenience sake I microwave them pretty regularly is that bad.
