Yes I like broccoli too but for some reason I do NOT like it raw. The flavor changes completely even just slightly steamed. I too love broccoli soup. One thing I do with broccoli that is super fast and yummy is put minute rice in a bowl with water, broccoli, and mushrooms, and microwave for the time it takes to cook the rice. Then the veggies are also tender and steamed. Top with lemon pepper seasoning, garlic, and soy sauce!

It's an amazing combination of flavors, and one I'd NEVER have dreamed would work, but it's SO good. He does salt, cracked pepper, and a bit of garlic powder, and does it in butter. Others could probably find a healthier alternative to butter (a bit of olive oil would add some tasty healthy fat!)
Heather---That recipe sounds WONDERFUL! Asparagus should be coming down a little in price soon---I'm going to try that! I really need to plant some this year for next year! Takes a year to produce but once you start it you will have it for years!

Roasted broccoli is great. I also like to throw it in with pasta, in the last few minutes of cooking the pasta, and use it to bulk up a pasta dish. That way, when I'm still just eating the normal 2oz portion of pasta, I feel like I'm eating double that because of the bulk the broccoli provides.
About a month ago the price of fresh broccoli skyrocketed at my store to almost $4 a pound, due to the weather I guess. I almost cried at the thought I wouldn't be able to buy it as often. I don't like to do frozen. Well, a few weeks later the price went back down to normal and I was pleased :)
I also love love love asparagus, but unfortunately it's price means we can only have it every once in awhile, when it goes on sale.
I'll eat it raw but usually steamed until soft (I'm not a fan of al dente veggies). My favorite veggies are cauliflower and cucumbers. Sides are often two cups of raw cauliflower with a bit of blue cheese dressing (though I can eat it plain) or a whole cucumber, peeled, seeded, diced and mixed with a bit of Greek yogurt, dill and seasoning salt.

Love broccoli. On salads, alone, in my eggs, fried in olive oil with garlic is a favorite. It is good also in casseroles.

Broccoli roasted in the oven, grilled on the George Foreman, steamed with some Mrs. Dash...these have been many staples next to beans on my dinner plates for a while. If you chow down on that combo (which is a little high in carbs but, I don't count it because of the crazy fiber intake) you will never have the evening munchies that used to plague me before I started this habit.

Recently, I've been making cheese fondue, and we always make broccoli to dip in that as well - YUM! A guilty pleasure.

I agree Dragonchilde, broccoli is super filling. Broccoli and beans are to me, the most filling foods. That's the most important thing to me. I hate being hungry. I usually eat a bean burrito with a whole wheat wrap for lunch and that stops me from being ravenously hungry at dinner time. Keeps me from binging.
I usually just boil my broccoli until tender and add a little salt.

I love vegetables, I used to want to be known for my amazing deserts, now I try to make the bestvegtable dishes. Broccoli is a weird one for me. I have to eatit raw or well cooked. I just don't like it tender crisp. I usually steam it then but a little butter in a pan with garlic, crushed red pepper and swirl in the broccoli and add a squeeze of lemon.

I love all kinds of vegetables and broccoli is right there on top with many others. I like it steamed and still a little stiff and still totally green. I also like broccoli salad. What a vegetable!!

I, too, love broccoli, along with many other veggies. It's definitely at the top of my list. My favorite way is just to steam it, sometimes along with cauliflower and carrots, and then lightly sprinkle with shredded parmesan cheese.
I think we should do a daily "ode" to each and every vegetable!!!!! :-) Then we could start in on fruits ... great post!!!

We love broccoli in our house too - there is always broccoli in the fridge. My other love is spinach salad and I love love love brussel sprouts. Actually, we love vegetables and often offer to bring extra to get-togethers as there isn't always enough for us.
I adore it even lightly cooked though, I eat so much of it.
I love making a tofu broccoli bake... mix a block of tofu with some mustard, soy sauce, tomato paste, smooth over parboiled broccoli, top with some peanuts and bake... so good!

I sautee some garlic and onion in a pan, cook some broccoli and whole wheat angel hair pasta, add it to the pan of garlic and oinion. Then add 1 tbsp of parmesean. I'm pretty sure i saw it on sparkrecipes but i dont remember because i have been improvising it since i saw it.

Broccoli is my favorite veggie. I just like it steamed with a little salt. I also like it roasted when it gets a little caramelized.
