Good afternoon,

Happy that this is my day among you to share gratitudes such as~~

~ fun creating an autumn-themed SparkPage this morning

~ washing my Honda Civic the "old-fashioned way" with the garden hose and a bucket filled with soapy water

~ getting an awesome resoution on an eBay purchase gone bad

~ preparing the recipe "Ocopa" with a classmate -- tomorrow we'll share it in the Food and Latino Culture class, along with a power point presentation and a paper to be handed in. I first tasted this delicious Peruvian potato salad with sauce when my former boyfriend's mom would make it for festive occasions (it's so good I'll share the recipe below!)

Blessed be,
xox
Maha

Ocopa Arequipa

Ocopa evolved from ancient Inca messengers’ travel rations. Today, it is a specialty of the city of Arequipa, in the southern tip of Peru.

6 Yellow or white potatoes
1 large Red onion, rough chop
5 cloves Garlic, peeled, halved
2 Tbsp. Olive oil
¼ c mint/basil/flat parsley,sprinkled with lemon
¼ cup Ají amarillo or to taste
8 Ritz Crackers, crushed (1 oz.)
2/3 cup Roasted peanuts (4 oz)
8 oz. Queso fresco
1 to 1 ½ cups Evaporated milk as needed
½ tsp. Salt to taste

2 Eggs, whole
Lettuce leaves for garnish as needed

1.Peel potatoes; rinse and place in cold salted water.
2.Bring to a boil; reduce heat to medium, and boil potatoes until just fork tender (about 20-25 minutes).
3.While cooking, add whole eggs; hard-boil for the last 13 minutes of potato cooking time.
4.Rinse potatoes and egg under cold water until cool; drain and set aside.
5.Heat oil; sauté onion over medium until soft (about 5 minutes).
6.Add garlic and ají, and sauté over low heat for another 3-4 minutes or so. It’s okay to achieve a little golden brown color; but do not allow the garlic to crisp or become too brown.
7.Add herb mixture; then remove from heat, and allow to cool.
8.Combine onion mix with peanuts, queso fresco and cracker pieces; place in blender, and purée until smooth.
9.While pureéing, add just enough evaporated milk to make a smooth, creamy sauce. It should be thick, but still pourable.
10.Taste, and adjust salt as desired.
11.Slice the potatoes width-wise into small rounds, and place potatoes on top of lettuce leaves. Top each round with a dollop of sauce, and garnish each potato round with a slice of hard-boiled egg. Serves about six.

Whatever you can do or dream you can, begin it. Boldness has genius, power and magic in it.
-- Johann Wolfgang von Goethe

Good morning,

And, yes, happy lovely October!!! Sweet to be here among all of you -- thanks for getting us going month-after-month, year-after-year, dear Rebecca and thanks to the "oldtimers" and "newtimers" in the community!

I'm grateful for that...and~~

~ the reminder from Goethe, as well as today's DailyGood.org on "The Habit of Starting" www.dailygood.org/view.php?sid=322
from a favorite writer Leo Babauta, who begins the article with this, that I needed to hear, "The biggest reason people fail at creating and sticking to new habits is that they don't keep doing it. That seems obvious: if you don’t keep doing a habit, it won’t really become a habit."

~ based upon this, meditation and pranayama ahead after finishing gratitudes, two hours after arising; [sigh] better late than never, huh!

~ the day appears to be dry and worthy of a bike ride!

~ the refrigerator full of fresh organic fruits and veggies after a WholeFoods shop yesterday

~ thoroughly enjoying a kafeklatsch with two women friends at WF before shopping

Blessed be,
xox
