Here are some ideas

Drizzle a bit of freshly squeezed lemon juice and freshly ground black pepper over the cucumber slices...1/2 cup of sliced cucumbers for just 8 calories and 2 grams of carb.One whole cucumber equals only 45 calories!

Appetizers
Phyllo Shells fill with cocktail sauce and top with a shrimp...easy and good low calorie

Low-fat Spinach Balls
2 boxes frozen spinach; (10 ounces each) thawed, chopped
1 cup liquid egg substitute
1/2 cup fat-free chicken broth
1/2 teaspoon Garlic powder 1/2 cup Grated Parmesan cheese
1 small Onion; finely chopped
2 cups herb stuffing
1. Preheat the oven to 350 F. Spray a baking sheet with nonstick cooking spray. Set aside.
2. Place the spinach in a strainer and squeeze out all the excess water. Set aside.
3. In a large bowl, combine the egg substitute, chicken broth, garlic powder, Parmesan cheese, onion and herb stuffing. Add the spinach and mix well. Roll into walnut-size balls and place on the prepared baking sheet. Bake for 20 minutes. Serve warm. Makes 15 servings (4 pieces each). Each serving contains approximately: 46 calories, 3g Carbohydrate

This quick and easy recipe works great for a salad or appetizer.
4 large avocados, peeled and halved, seeds removed
1 1/2 c. small salad shrimp, cooked and washed
1 T. lemon juice
1 T. onion powder
1 tsp. black pepper
1 T. paprika
Set avocados on serving plate with cut side facing up. Combine shrimp, lemon juice, onion and pepper in a medium-sized mixing bowl. Spoon shrimp mixture onto each avocado, covering generously. Sprinkle the top of each stuffed avocado with paprika before serving. Serves 4.

Cucumber lemon-garlic dip
In a bowl combine 1/2 cup plain non fat yogurt, 1 tsp. of lemon juice, 1/4 tsp of garlic powder and a pinch of salt if desired.....serve with cucumber slices or zucchini slices, blue chips or even put on a small pita wedge

Shrimp Stack
1 Tsp. of Fage 0% plain yogurt
1 tsp. of fresh lime juice
1/4 tsp. of Jala\oeno sauce
1/4 Avocado
5 Large cooked Shrimp
Chopped Parsley and cracked black pepper
yogurt, lime juice, sauce, avocado all together...Spread on a Wasa Cracker top with shrimp, parsley and pepper

Zesty Turkey Meatballs (hors d'oeuvres or a main course)
Preheat oven to 350 degrees
1 pkg. of taco seasoning and 1 egg to turkey to 16 ounces of Jennie O 99% Fat Free Ground Turkey Breast
Form Meatballs...Bake @ 350...
Top with salsa and sour cream or Fage 0% Plain yogurt

Form meatballs into bite size balls
Bake until firm-approx. 20-25 minutes.

Makes about 25 meatballs
Around 130 Calories
1 Sugar and 7G of carbs


Presidents Brie, cut up red pear slices, and add some strawberries.
