One of my new favorites is a recipe I actually found here on SP... it's Diet Coke Pork Chops, and tastes exactly like barbecue sauce in the end. Here's the link: recipes.sparkpeople.com/recipe-detail.asp?

I've actually made this using turkey tenderloins as well, and the meat comes out incredibly tender/pulling apart.

Another trick in my house is to stock up on various options at Trader Joe's. If you have one by you, I would highly recommend it! I love their frozen stuffed fish, which takes 30 minutes to defrost (in cool water on the counter) and then just goes in the oven for 25 minutes.

Hello,
I am a new mommy of a beautiful 5 month old girl! I haven't really been much of a cook and left it to my husband. He is a steak & potatoes kind of guy, and thinks nothing of making fish sticks and french fries. So, I am taking over the kitchen. My problem is I feel so overwhelmed there and need something easy & healthy to make. Any suggestions or a point in the right direction would be so helpful, thanks!
