Oh My! I LOOOOOOVEEEE sweet potatoes but I can't have a lot because of the potassium levels! (I'm on dialysis).

Get some sweet potatoes. Cut ends off spray each with Pam or light butter all over skins. I

slip my hand in

a baggy to do this part if you use butter ,then toss baggy away less mess on hands. Stab

hole in each potato and

large ones cut in half. Place in crock pot in am you can spray pot or not , and by supper or

even often mid day there

done. Best I have eaten as skins come off 100 percent and potato is soft as butter.

Soft and tender you need no butter for a night time treat also.

To reheat leftover ones cut and microwave about 15 to 20 seconds and tastes like just

cooked.

I will never use microwave to cook them again or my toaster oven. emoticon

ABC soup (don't ask me why the name is this, I don't know myself!)

4 chicken drumsticks
3 potatoes (quartered)
1 carrot (chopped)
1 onion (quartered)
1 can Campbell's Cream of Mushroom soup.

Put everything in the crockpot, top with water till full, and simmer for 4 - 6 hours.
Enjoy!

I love vegetarian chili in the crock. Also casseroles seem to come out well.

Here are a few of my favorites.

ITALIAN CHICKEN

1 pound boneless skinless chicken - do not cut them
1 jar good quality pasta sauce like Classico
1 tablespoon Italian seasoning
3 cloves garlic minced
1 onion diced
1 green pepper diced

Put chicken on bottom of crockpot, Place garlic,onions and green pepper on top. Pour the can of pasta sauce on top, then the Italian seasonings. Cook on low 6 hours. Shred the chicken when done and serve with spaghetti.

BBQ Pork Roast

3-5 pound pork roast
1 bottle Sweet Baby Rays BBQ sauce
3 heaping tablespoons of yellow mustard

Place roast on bottom of crockpot. Mix in a bowl the bbq sauce and mustard and pour over roast. Cook on low 6 hours. Serve with salad and sweet potatoes.

Roast Beef

3-5 pound chuck roast
4 white potatoes cut into 4ths
2 carrots cut into thick coins
3 stalks celery chopped
1 onion chopped
1 can beef gravy
1 envelope Lipton onion soup mix
2 tablespoons flour
1 teaspoon parsley

Place roast on bottom of crockpot. Surround it with the veggies.
Heat the gravy and onion soup mix in a saucepan, once it is really hot, add the flour little bit at a time and stir until thickened, add the parsley. Pour the gravy mixture over the roast and cook on low 6 hours.

I FINALLY racked up some extra money to buy a crock pot. What are your favorite crock pot recipes? I'm excited to try the salsa chicken from the SP cookbook!
