This isn't a true recipe, per se, but for lunch I love baking a potato in the microwave (be sure to prick it all over with a fork first) and then topping with lowfat Greek yogurt, shredded cheese, salsa, cilantro, and onions. Great lunch!

If you have any new recipes for foods that can prepare using microwave oven, particularly recipes for tofu, and beans (not together), please share.
