I use the recipe on the back of Bob`s Red Mill ground flax seeds. These muffins are so yummy and so healthy! they have grated carrots, chopped apples,oat bran along with the flax. I don`t know if it calls for raisins, but I add craisins to mine. It makes several regular sized muffins and I freeze them and pull them out for a quick breakfast.
Found this one on line-- Honey Raisin Flaxseed Muffins Makes 12 muffins. Bake time: 18-22 minutes Preheat oven to 350 degrees Farenheit. Put cupcake papers in your cupcake/muffin pan.
In a large bowl mix together dry ingredients: 1/2 cup brown rice flour 1 cup ground flaxseed (I use organic golden ground flaxseed) 1 cup almond flour 1/2 cup oat flour 1 1/4 teaspoon baking soda 1/4 teaspoon salt 1/4 teaspoon ground nutmeg 1/4 teaspoon ground ginger 1/4 teaspoon ground cardamom (optional)
Add: 2 eggs 1/4 cup oil (I use a mild flavored olive oil) 1/2 cup honey 2 tablespoons Blackstrap Molasses (See notes below) 1 tablespoon apple cider vinegar 1 cup milk of your choice (I used So Delicious Unsweetened Coconut Milk in the refrigerator section at some grocery stores) 1/2 cup raisins (optional if you don't want them)
Whisk everything together until well blended. Divide batter into a 12 cupcake-paper lined pan. Bake at 350 degrees for 18-22 minutes or until done. If you're not sure if they are done, simply insert a toothpick in a muffin; if the toothpick comes out clean then they are done. Enjoy!
You may have never used Blackstrap Molasses before. It is very different from regular molasses. For one thing it's BLACK and thick and not very sweet tasting. However, a small amount of Blackstrap Molasses is a baker's secret for adding a tremendous amount of flavor and color to baked goods. (A little goes a long way.) Don't leave it out - it really makes these muffins POP!
You can find Blackstrap Molasses at your local health food store or Natural Food Grocery Store. Once in a while you can even find it at a regular grocery store. Blackstrap Molasses is high in iron and is considered by many people to be a health food
