I like to get creative with soups and they don't take long. I always have cartons of broth on hand and I make what I like to call 'Pantry Soups'. Just whatever I find in the cabinets, veggies on hand and a meat. Haven't made one yet that wasn't delicous.
another quick favorite: dice red potatoes, season with salt/pepper/garlic, add cooked sausage or kilbasa or ground whatever, bake 30-40 minutes at 375. Sometimes I add green onion, or olives, or top with cheese. (I consider it quick because it is about 10 minutes prep and then while it cooks, I can do house work, next thing I know, it's done! LOL).
Does your family like things like quinoa or cous cous? I like to mix meatballs with some jarred marinara (add more season because they are always bland) and throw it on top of some quinoa.
Great.. now I'm hungry.
