Love salsa and now that I don't eat the chips I have been looking for new ways to enjoy it. I will try this also. Thanks everybody. I love trying new things, time to break out of my food rut.

That sounds wonderful. I hate to say that the only way I have ever tried avacados is in guacamole which I don't like. I am going to try this though because I used to not like yogurt or tomatoes either but they are a staple in my diet now. This sounds light and refreshing plus easy to make. Thank you very much.

One snack that I absolutely love is avocadoes! So what I do is mix together 1/4 of an avocado , 1/4 cup cottage cheese, some grape tomatoes, and some diced cucumber. Its only got 10 grams of carb per serving, and 2g of that is fiber. Not to mention, it is delicous! Good Luck!

I will try that. I joined Sparkpeople back in August but kind of quit using it because it is a little hard to navigate as a new person. So many boards, teams, challenges, blogs and other things that it seems to take hours just to figure it all out. Hours that right now I don't seem to have to go searching to find the right place to ask questions and all. I am trying again but seems I am posting in all the wrong places again. So I won't waste what time I have complaining.

He really did give us the basics and is always available for questions. I was just looking for some fun twists that maybe others had found on similar diets. I have already found a way to make "muffins" that fit into my diet plan using yogurt, pumpkin, oat bran and eggs with some spices for flavor. I just need some more ideas like that to round out a more varied diet.
I was wondering if anyone had tried things like the kale chips I have heard about and if so how they make them or do they buy them.
I found some oat bran crackers in a little British food store that fit in also. I would just like to find more fun and interesting snacks or mini meals that will keep me from becoming bored and more inclined to slip back into bad habits.

Really...the doctor who prescribed this diet should be providing the "how-tos". It would be based on your carb limit, your fiber goal, and your other food choices.
A 1/4 cup of almonds has about 4-5 grams of fiber.
1/2 cup of beans would be a great fiber source, it will also have about 15 grams of carb.
Perhaps you are not eating enough veggies.

I am on a doctor approved and monitored low carb diet. I have cut out all sugars and artificial sweeteners except for liquid stevia. I eat vegetables that are not starchy but not fruit and I do not eat bread or grains of any kind except oat bran and occasionally steel cut oatmeal.
I have a very hard time finding things to snack on. Who knew you could ever get tired of cheese and nuts. I didn't think I could but oh yes I am. I eat a Chobani yogurt everyday for one snack but that gets old after awhile too.
I know that there are a lot of creative people on here that come up with some great recipes and ideas so please pass anything along that may fit the bill.
