Good for you.. I too, learned to love veggies more as I got older,, I tried kale and love it!! Baked as chips, or raw in salads. I tried green smoothies and love the taste. Better than a V8 that's full of sodium.. There are so many veggies and great fruits. And sometimes what you thought you never liked, you will wow yourself and love...
Hey, girl...you go! Most people don't like veggies because they over cook them and then the texture is mushy. Veggies do help in protecting us against cancers, diabetes and heart diseases as they provide nutrients and amino acids, vitamins and minerals.
I place great importance on Veggies as they are mostly low calorie, some are high in water and can hydrate you, some have more fiber. Steamed, baked, grilled, stir fried...biut never coated with flour or high fat sauces.....I change the texture sometimes too by adding almonds, different seeds like sunflower, caraway, flax, etc.
Glad you are now incorporating veggies into your diet.

Growing up I have been a none eater of veggies because I hate the smell and half of the veggies I didn't taste because of the way they looked Every time I tried a veggie I thought of it as me being on the show Fear Factor breathe in ,breathe out . Now that I am getting older "41" for the last 3 months I have made the big Nasty Switch that I can proudly say I'm a veggie eater and loving them because I wanna live a healthier life style and be around for a long time . I slowly gave in and with the help of spark people I am thankful.
