I find that taking one day a week and preparing some basic things to have in the fridge is very helpful. Sunday's are my day to prep for the week. I don't do low carb but I usually make a big fruit salad, boil a dozen eggs, grill a package of chicken, and make a pot of chilli or some other type of soup. I'm a mother of five and know what it's like to feel like there is not enough hours in the day to take care of everyone. Don't give up! You can do this for yourself and for your family. Find basic easily prepared foods that you like and cook them in bulk when you have the time. You can always cook twice the amount and freeze the second portion for a later date. Good luck!
