This can be used as a salad topping or eat with tortilla chips.
If you use as a salad topping, you won't need any salad dressing.
Place chopped lettuce in a bowl and top with a big scoop of my recipe and toss !!
1 large tomato seeded and chopped
1 green pepper seeded and chopped
1 red pepper seeded and chopped
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can garbanzo beans, drained
2 cups corn kernels
1/2 red onion, finely diced
1 tablespoon chopped cilantro
1/4 cup olive oil
3 tablespoons fresh lime juice
1/2 teaspoon black pepper
salt to taste
1/2 teaspoon honey
2 jalapeno peppers, seeded and minced (optional , this will make it spicy !! )
1 avocado sliced (optional )
In a large bowl, combine all . Mix well; refrigerate and allow flavors to blend. The longer it sits in the fridge the better.
