Obviously there's 'Meatless Mondays'; check out Mark Bittman's (NY Times) articles and such about "Vegan/Meatless before 6" or such.
See also: the "Post Punk Kitchen" (www.theppk.com/ ) is an excellent resource for meatless/vegan cooking ... recipes that taste good! The woman responsible for it -- Isa Chandra Moskovitz -- has written a number of *very good* cookbooks, and I trust her recipes much more than those from other authors.

I'm making tacos tonight using cooked lentils in place of meat. I am going to season the lentils with cumin, paprika, chilli powder, black pepper and cilantro; add a little water, and simmer for 5 to 10 minutes. I also use cooked red lentils to thicken a pasta sauce that I make with low sodium V8 to thicken the sauce and add some protein. I also add baby spinach, beans and spices and use that over pasta or spaghetti squash, or even yellow squash and zucchini peels.
I signed up for a Meatless March challenge. I also promised to avoid animal milk and cheese. I did not promise to give up eggs, haha. Does anybody have any vegetarian, mostly vegan recipes they would be willing to share or resources I can check out? Looking for whole foods, nothing processed. I pretty much avoid carbs (in the forms of bread, pasta, rice, potatoes).
