I am not a huge sandwich fan either but I don't mind wraps. I will make chicken breasts at the beginning of the week or maybe buy a rotessarie turkey breast at the store and use it in the wrap. I like it a lot more than lunch meat. I use it on salads, too. I eat hard boiled eggs for breakfast at work often - you could have some for lunch - then maybe some fruits and veggies. Oh, cheese and crackers maybe?

It's hard being in the van and not having a microwave or stove to have hot foods.

If you are in your van, you probably don't have access to a microwave. But one idea is this: many gas stations have a microwave inside (for you to heat up foods you buy there, like hot pocket type things, etc). Most attendants are very happy to let you use their store microwave for your own food, if you go in and ask nicely (especially if you bought gas there, or a coffee, or a diet soda from their fountain soda machine). If you end up buying a low-cal or no-cal drink for $1 or so, it might still save you money over buying fast food, and you can heat up your own healthy hot lunch!

Some of my favorite lunches are: pasta with frozen veggies and marinara sauce, chili made with beans, bell peppers, and spinach over brown rice, or even a simple canned soup (progresso light garden vegetable, etc).

I like hummus and whole grain pita- don't know if that counts as a sandwich.

Good advice from the previous poster. Have you tried checking out Spark Recipes for ideas?

One meal that I love is called The Loaded Bowl - I found it in my Clean Eating magazine. Brown rice, black beans, cherry tomatoes, avocado, cilantro, chopped chicken. Those are usually the things I put in it but you can change it around based on what you like. You get the basic concept. Sometimes I will add salsa or a small amount of basalmic vinagrette.

Grilled chicken breast and fresh veggies with a piece of fruit.

look up some salad recipes....make your own dressings or don't use any at all though..the premade dressings are full of sodium and usually fat and calories.

I like simple tuna with low fat mayo on lettuce and kale..I put some relish in it and it is so good and filling. Tomatoes and cucumbers on it would be good too.

Have you tried the low carb wraps? Those usually are pretty decent sized and usually have high fiber and less than 100 calories. Fill one with veggies, hummus spread and maybe some lean meat.

Raw veggies dipped in hummus is good too and easy to transport and eat on the go.
Boiled eggs,low fat cheese sticks, whole fruits like apples and bananas, and nuts are easy to take with too.

Hello,

I am going to go grocery shopping later and I need some serious help. I am a home visitor, so I have 12 families that I visit each week all across Sacramento. I'm in my van alot. I have a small ice chest. I don't really like sandwiches and I need to start packing my lunch, so I can save money and calories. Please help me.
