you may want to search out some glueten free recipe sites as they will have lots of info on different flours -- but I don't think it is easy to bake with the substitutes.

Has anyone tried baking with Jerusalem Artichoke Flour?
I've heard that it only has 1.25 calories per gram, whereas regular flour has about 4 per gram.

Sounds interesting, but I don't know anyone that's used it.

Aside from the artichoke flour, are there any other lower calorie flour substitutes?
