LOW FAT CHOCOLATE PUDDING
1/3 cup sugar
1/4 cup cornstarch
3 tablespoons unsweetened cocoa like Hershey's
1 pinch salt
2 cups skim milk
1 ounce semisweet chocolate, finely chopped
1 teaspoon vanilla extract
OPTIONAL 1/2 teaspoon instant coffee to make it mocha flavor
In a 2-quart saucepan with a wire whisk, mix the sugar, cornstarch, cocoa and salt until combined. Whisk in the milk until blended.
Heat the mixture to boiling over medium heat, stirring constantly. Add the chocolate, and cook 1 minute, stirring until the chocolate melts and the pudding thickens slightly.
Remove the saucepan from the heat and stir in the vanilla.
Spoon the pudding into 1/2 cup portions. Serve warm or cold. If you like it cold, cover the pudding directly with plastic wrap and refrigerate.
