I completely know what you mean. My husband could eat salad every single day for the rest of his life and not get bored. Me, on the other hand, am the opposite, I can only have salad for lunch 2-3 times for lunch a week otherwise I get bored. So what I've started doing is using left overs and always making sure there is enough. We cook enough for 4 people and since it's just my husband and I we take the left overs to work along with some pre measured cheese we put in plastic bags. Or whatever other snacky thing we feel like.

I have a 1/2 sandwich with turkey and mustard with tomato or avacado and a soup at hand (chicken & stars low calorie) or a half a sweet potato with ICBINB and cinnamon or salad. Cut up peppers and humus or wholly guacamole. You just have to be creative and grab small amounts of things you love.

Lately I've been making something I call "Tuna Slaw" for lunch. It's really, really good, fast, cheap and easy and versatile.

I throw a couple of handfuls of bagged shredded cabbage or broccoli slaw into a bowl.
Add a good shake of white vinegar and a couple of tablespoons of lowfat mayo, a drained 5 oz can of tuna in water, salt, pepper, garlic powder, and whatever else I feel like: little green onions are good, so are chickpeas or canned white beans.

It's full of protein and it tastes really creamy and crunchy and indulgent, and I track it at a little over 200 calories for a LOT of food.

I'm with you Chopper - if I get board I got out and with only fast food and Panera nearby with reasonable prices I don't always make a good choice.

We are vegetarian so I don't know if this is something you would go for.. I try to pack some pita chips, carrot sticks, and hummus.. actually I think you can get those little single-serving hummus thingies with either crackers (sabra has them with crackers) or veggies.. it is nice to grab one and go.. if you throw in some fruit or a side salad, it is pretty filling...

Using whole wheat tortilla - you can make a wrap like a burrito. I make mine minus the rice mostly or with very little brown rice.
Another way I use these tortilla- beat an egg white with chopped onion, pepper n salt. Heat the tortilla (no oil) on a griddle/pan and pour the egg mixture on the top. Flip over and cook. This tastes like a healthy egg roll by itself. I add lettuce leaves and lean meat/tofu/mushrooms. You can add a dash of mayo too- I don't. You can make this in less than 5 min !

tuna lettuce wraps (make tuna in advance at night with your fave seasonings, little bit light mayo or greek yogurt) put in container and pack a couple of lettuce leaves to wrap it up on your lunch break (you can also do this with chicken breast)

left overs from dinner

whole wheat pasta salad packed with veggies and low fat dressing

pita pocket (whole wheat) stuffed with lean protein and veggies

whole wheat tortilla with lean meat and low fat cheese (spice it up adding different veggies like cucumber, peppers etc)

Ok I work at our local hospital and I only have a half hour lunch. I am looking for some healthy but fast lunch ideas. I am getting sick of salads and then when I am sick of that I wont eat and I will just drink coffee and then at dinner I will pig out.

So please throw me all the ideas you can come with.
