I am a cheese lover, but since I can trigger myself to eat too much, too often, I have found some good low-calorie cheeses.
(1) I absolutely love eating light Laughing Cow cheese spread on Flatout multi-grain wraps (2) Crystal Farms non-fat shredded cheddar is a great, tasty cheese to use in taco salads, on lettuce salads, in tacos, etc. I use it on my homemade pizza, too; but some people think it is too "clumpy." I don't find it to be that way, personally. (3) Cabot block sharp light-cheddar is low calorie and tastes very much like regular sharp cheddar. It is great sliced and paired with multi-grain crackers. It can be grated for tacos, salads, wraps, etc. (4) Kraft also makes a lo-fat shredded cheddar and a mozzarella, but it is more expensive and more difficult for me to find. I have tried both and like them. I have used both on homemade pizza.

I love the Babybel cheeses and Laughing Cow Lite Swiss wedges. I like to spread a wedge of laughing cow swiss on a melba toast and eat for a snack.
I have also grown to like WW low-fat cheese. I use it when I make toasted cheese and tomato sandwiches. It's not bad.
When I cook and have to add a shredded cheese, I always buy the 2% milk types.

I get the baby bel light cheese, super easy to pack as a snack and 50 calories.
I also like the laughing cow light (a creamy white spreadable type) - nice on celery.
Most lowfat cheeses are like plastic and I would rather have a smaller amount of something that tastes decent.

I'm not sure if you have Kroger where you live, but I buy the reduced fat Kroger brand cheddar. I buy the blocks and shredded bags of cheddar. I think it melts better than the full fat kind (less greasy).
I like some of the Sargento reduced fat cheeses - they're pretty tasty. I eat pretty low fat, so an ounce or so of reduced fat cheese is often where I'll work fat in. Trader Joe's also used to have some decent reduced fat gouda and cheddar, but I don't have one terribly close to me now (supposed to get one next year - woot!), so I haven't had them in some time.

Does anyone have a recommendation for a lo-fat cheese that tastes like real cheese, not something that masquarades as cheese? I love cheese and have been trying different lo-fat versions. So far, I haven't found one that doesn't taset like library paste!
