cottage pie (Shepard's pie)



I also have a favorite comfort food my grandmother and mother make that isn't exactly healthy, but can be slimmed down -

1 pound extra lean ground beef
2 cans of green beans
2 cans of reduced fat cream of mushroom soup
8 oz 2% velveeta cheese

brown the beef - drain and rinse well
Combine all ingredients, and bake at 350 for appx 45 mins

serve over boiled potatoes

Some ideas:

taco salads
chilli (5 minute prep, crockpot)
mini meatballs for wedding soup
big meatballs and spaghetti squash
spinach/beef fritatta

Use Chef Meg's taco seasoning:

Sometimes I just use up whatever veggies I have, or like cabbage & canned tomatoes w/ground beef, all in one skillet. Season it up with whatever strikes my fancy.

Salisbury Steak w/ Mushroom Gravy:
I made a half batch and only used ground beef when I made it.

Spicy Thai Beef and Jasmine Rice:
It was actually better the 2nd day.

We buy an entire side of beef at a time and I have extra ground beef to use. We just ate the skillet lasagna (yummy!) and I need to use ground beef one time this week.

What is your favorite ground beef meal?

I gave up corporate life because it was too busy and now I am even busier so waiting to have time to get healthy is not an option. My time is NOW!
