I make the falafels but don't cook them sometimes, and the "dough" keeps fine in the fridge for a week or two.

We freeze falafels and pull as we need for lunches, they hold up fine.
We've never made large quantity of risotto to freeze.

I was reading a Spark recipe for chickpea falafels earlier and have no idea how you keep these or any falafels; any advice would be appreciated?

Also with risotto, if I make a large batch am I able to freeze it and would you suggest adding extra sauce of some kind (more stock?) to microwave it later?

Thanks!
