I don't have kids of my own, but made a salad for a dinner at my sisters using kale, collard greens, and swiss chard. I won't cook my kale. Just don't like it that way, but with a little love and persistence, you can easily wilt it and use it as lettuce.
remove the stems and chiffonade the kale (i roll it and them slice it. it comes out in pretty little ribbons), then I put some salt on it (usually use pink himalayan) and just massage the heck out of it. It will turn dark green and shrink. I add some cranberries, lemon juice and sesame seeds. Makes for an awesome salad.
I also dehydrate it so I can make kale chips.

I have been using Kale to cook with since it has come into season. My children, who usually are not that picky anyway, just love kale. They just thought it was funny looking spinach, but they love the taste and say it absorbs the flavors of the spices better. I sauté it with vegetables and put it along side chicken breast or pork chops. Has anyone found their children to be enthusiastic about a new healthy food?
