It also makes a great slaw when grated - either by itself or with broccoli or cabbage.

It has a texture close to a raw potato...kind of wet, crisp. But it's sweet and very mild tasting. Great cut in matchsticks and added to a salad.

It sort of reminds me of water chestnuts. It's kind of a neutral taste, but very crunchy. Cut into sticks, it's good for dipping!
