My mom does the poke cake, but I think differently. She bakes the cake (usually a yellow cake mix) according to directions. When it is finished, allow to cool. Poke holes in the top. Mix 2 packages of jello with the hot water only (this amount if your cake is in a 9x13 pan) and pour over the entire cake. Cool in fridge to set jello. Then she makes a pudding frosting but I don't remember the proportions for that. She's done this with 2 kinds of jello - pouring 1 color on 1/2 of cake and the other on the second 1/2... looks really cool!

I have had this cake both ways described here and they are both good! The poke cake is a favorite at baby showers and parties the other is more for home sweet to eat cake.

It is called Jello Poke Cake and it is one of my favorites !!!!

JELLO POKE CAKE

1 (18.25 ounce) package white cake mix
1 (3.5 ounce) package instant vanilla pudding mix
4 eggs
1 cup water
1/4 cup vegetable oil
1 (3 ounce) package your favorite flavor Jello mix
1 cup boiling water
1 cup ice water
1 (12 ounce) container Cool Whip

Preheat oven to 350 degrees

Spary a 9x13 pan with Pam

Combine cake mix, pudding mix, eggs, 1 cup water and the vegetable oil and blend well. Beat at the medium speed of an electric mixer for 4 minutes. Pour batter into the prepared pan.

Bake for 45 to 50 minutes or until the cake springs back when lightly touched. Let cake cool in pan for 15 minutes.

Meanwhile, dissolve the Jello in the boiling water, then add the cold water.

Poke holes in the warm cake with a fork at 1/2 inch intervals. Pour Jello over cake.

Chill cake for 3 to 4 hours then frost with whipped topping. Keep cake refrigerated.

Yummmm !!!

You can just add the jello mix in with the cake mix and then follow the directions on the box.... then use cool whip as the icing
