Much depends on the recipe...my family can tell when I subsititute applesauce and refused to eat that item. Some recipes for cake will say to add seltzer water or 7 up in place of oil, but this MUST all be eaten in one sitting as it drys out quickley. I prefer to use oil and keep portion size somewhat smaller and enoy the full taste.

Thanks every one for your input. I have been so concerned about eating too much fat. After monitoring my food intake, I see I am actually not eating enough fat just about every day. I do watch a bit too much.
Studies now indicate that extra virgin olive oil may help to lower blood pressure, and shown to reduce the incidence of colon., breast and skin cancers. Extra virgin olive oil is high in polyphenols, which are powerful antioxidants & monounsaturated fats which contributes to lowering bad cholesterol. Olive oil also has Oleic acid which aids in keeping our arteries supple and helps prevent cancer. If your allegic.....that's a different story.
I don't use oil as my husband can not eat any form of oil or marge products as he is allergic to all oils and fats so we don't use it now and again we will use a bit but then he loads up with tablets not to have an reaction, he also can not eat junk foods and chips and snacks, so I would say no but in my case it is nice

I'll usually cut the oil content in half. If a cake mix calls for 1/2 cup of oil, I'll use only 1/4 cup and it still comes out fine. You have to remember, though, that if you stick to eating just one piece of cake, you're not ingesting 1/2 cup of oil, you're only eating an eighth of it (or a sixth, depending on how many pieces you cut).
I rarely bake, though, so I haven't experimented a whole lot with oil substitutes, except for the applesauce thing. And NSPIXIE, I agree, subbing the butter in shortbread cookies just isn't worth the end result, especially if it's a family tradition. At Thanksgiving we always do potluck. We have a rather large family, so everyone is assigned a certain part of the meal to cook so the host doesn't get stuck cooking the entire thing. And one year I thought I'd be slick and substitute lowfat and fat-free ingredients in the dishes I usually make. Well, that didn't go over very big, so I never did it again. This crowd can tell the difference in the taste and messing with Thanksgiving dinner isn't an option either, just like subbing the butter in your shortbread cookies isn't an option.
At Thanksgiving people don't care about calories, they just want to enjoy the meal. So now I say, when it comes to holiday meals and treats - if it ain't broke, don't fix it.

It depends on the recipe. For example, the shortbread cookies I make at Christmas need butter - subbing applesauce would not make a shortbread cookie worth having. I only make them at Christmas and ruining them is not an option.
There are a lot of recipes that use a ton of unnecessary oil. I've seen some cake recipes that call of 1.5 cups of oil! I usually just move on to the next recipe, not everything you find on the internet is good!!
Sometimes recipes for veggies or meats call for a lot of oil for pan frying. A good non-stick pan and a spray of oil can cut lots of calories without messing up the result.

Depends on what you're making. With some things, substituting the oil turned out to be a disaster, but things like baked goods (cakes, etc) you can sub applesauce for the oil.

When I look at recipes and see how high the fat content is, I try to makeover the recipe by leaving out the oil or butter. Is it necessary to include oil in recipes?
