I LOVE using my crock-pot! Tonight we had chicken fajitas from the crock-pot. This could easily feed 4-6 people (Its usually just the two of us, but I make extras for leftovers lunch)

I place an entire bag of 3 pepper & onion blend frozen veggies in the crock-pot. You can use fresh if you prefer, but I like to keep things low fuss. Add two crushed garlic cloves, a can of drained diced tomatoes (no salt is my preference), and some spices -I usually add 1/4t cumin, 1/4t chili powder, 1/2t turmeric (I'm obsessed), 1/4t curry, a little onion powder, garlic powder, Mexican oregano, dried chives, thyme, or sage... really I just throw in whatever sounds good to me that day, but I always put the first four in. Then I throw in 4 chicken breasts. Cook on high for about 4 hours or low for 8. You may need to drain off some excess juice. Shred chicken with two forks and serve with tortillas (I prefer the soft thick flour ones for this meal), some shredded cheese, sour cream or greek yogurt, lettuce, tomato. You can do rice as a side or refried beans or corn, which is what my husband prefers.


Pork roast just seasoned with whatever sounds good and a little broth or stock that is on hand is always simple and delicious.


Honestly, I don't measure much and am bad at giving instructions, but you can't mess this up.

Hormel Garlic and Onion pork roast. Add 1 small bottle of MOJO sauce from the spanish section. Crockpot On low 6-8 hours. On high 3-4 hours.

Hot wings
8 pounds of chicken wings
1 cup of cider vinegar
2 tbls. hot pepper sauce
2 cups of low sugar BBQ sauce.
Rinse chicken wings in cold water. Mix cider vinegar & hot pepper sauce together...pour over wings, then pour the BBQ sauce over it all. Crockpot on low 6 hours or on high 3 hours.

I am a fanatic for creamy foods yet cream is not my friend when it comes to fat and calorie content.. so my go to replacement for creaminess is plain greek yogurt! One of my favorite recipe re-dos for our crock pot is swedish style meatballs. I am not great at writing out my recipes to pass along but I will do my best below... hope you enjoy emoticon

I package 60 count frozen turkey meatballs
half of 1- 15oz can low sodium beef broth (more if needed depending on size of meatballs)
I- 16oz jar reduced sodium brown gravy
1- 16 oz plain greek yogurt
1 onion finely sliced
1 pkg cremini mushrooms thinly sliced
2 Tbl Olive Oil

In a small bowl mix together the yogurt and low sodium beef broth and low sodium gravy and set aside

In a pan over medium heat add the olive oil and sweat the onions for about 5 minutes then add the mushrooms and cook for another 5 mins

Pour the meatballs in your crock pot, top with onion and mushroom mixture and top all with the sauce mixture... adding additional beef broth if needed to come to half way up the meatballs (this can vary depending on the size of the prepared meatballs)

Cook for 6 hours on low or 2.5 - 3 hours on high and then serve over buttered yolk free egg noodles, rice, or alongside your favorite accompaniment

Here are a few of my favorites...I cook mine on low for 6 hours and ALWAYS put the meat in frozen. Yes, frozen !!!!!


BBQ Pork

3 pound Pork roast
1 bottle Sweet Baby Ray's BBQ sauce
3 heaping tablespoons of yellow mustard

Place pork on bottom of crockpot, pour bbq sauce and mustard.
When done cut up the meat and put back in the crock and mix well with the sauce.
I always microwave sweet poatoes and serve it with this.

ITALIAN CHICKEN

1 pound boneless skinless chicken breast
1 green pepper chopped
1 onion chopped
3 cloves garlic minced
1 heaping tablespoon of Italian seasoning
1 jar your favorite pasta sauce

Place chicken on bottom of crockpot, Cover with the veggies, seasoning and the sauce.
When done, take out the chicken, slice or chop it up and put back and mix well with the sauce and serve with spaghetti.

BEEF STEW

2-3 pounds stew beef
3 white potatoes cut into chunks
3 sweet potatoes cut into chunks
1 onion chopped
4 celery stalks chopped
2 carrots sliced into coins
1/2 pound string beans cut into thirds
4 small cans fat free beef gravy or 2 large
1 envelope dry onion soup mix

Place beef on bottom of crockpot. Surround the beef with the veggies.
Mix the gravy and the dry soup mix together and pour over all.

I use my crock pot a lot during the week and I am looking for some new recipies. We eat a lot of chicken but I am open to try some new things. Any ideas would be great. emoticon
