1 cucumber sliced thin 1 onion sliced thin 1/2 c. vinegar (any type) 2 tbsp. sugar (or substitute) Water
For the mix, in a 1 cup measure, put the vinegar, sweetener, then fill the rest up with water.
Mix vigorously until sweetener dissolved. Pour over cucumber/onionis. Refrigerate for 1 hour then serve. Very refreshing.

My Mom's cucumber salad, she's German but I'm not sure of origin of this dish. Slice your cukes very thin, I use the long side of the grater. chop white or green onions, however much you like. Make a dressing of Red Wine Vinegar, oil and a few dashes of Magi (found in the isle with sauces). Salt and pepper to taste and let it marinade for at least an hour.

I love asian cucumber salad - it's really refreshing in the hot weather. It's a lot like quick pickles, just with asian flair. I don't have a recipe because I tend to just make them from whatever I have on hand, but rice wine vinegar, sugar and some kind of chile or red pepper flakes are the staples. From there you can add cilantro, sesame seeds or oil, thinly julienned carrots, ginger, garlic or whatever suits your fancy really.

I like to slice up cucumbers to have with chicken salad (or tuna salad) instead of the bread. It feels like you're eating more, since you're eating in in spurts, and you're also getting a serving of veggies.

I'd peel them, chop them and throw them in the blender with tomatoes(canned or fresh), lemon, and a bit of chopped onion. Any herbs, such as fresh parsley, or coriander - but if you don't have them, you don't need them. Salt and pepper to taste. Chill. Add some hot sauce if you like spicy - then drink the 'gazpacho' as is, cold or even mixed with vodka for a kind of bloody mary (if you drink).. Go light on the salt. Without liquor, call it a 'Virgin Mary.'
Add in chopped celery to make a gazpacho, and some olive oil - a cold soup, a bit more 'chunky.'
You'll never regret the workout you do, only the one you don't.

The recipe for the blueberry/cucumber salad looked really good. The site also had a recipe for cucumber salsa and cucumber/apple/basil salad that both looked good. I am going to be checking that site for more recipes.

Loving this topic right now since we have so many cucumbers coming from our garden! No...seriously, I brought 5 huge ones in to work today and still have 6 already picked and more coming in every day!
I'll take a look later on here to refresh what I've done in the past. Greek salads are awesome, I also will just slice fresh tomatoes and cucumbers from the garden and marinate them in garlic, fresh basil, salt pepper and a little EVOO and eat as a part of "Mediterranean plate"-hummus with pita, olives, pepperochinis and feta cheese to just snack on as a full yummy lunch!

my mom used to make what she called "summer salad" which was chopped cucumber, tomato and a little onion, tossed in italian dressing (or olive oil, vinegar & spices). Let it sit for a few hours to get all the veggies nice and marinated. Great as a side to grilled meats, and if you get some nice soft italian bread to dip into the leftover juice...YUM!

cut them in big rings, or lengthwise into plank shapes, and use for dipping into hummus. Better than celery!
Cucumber/radish salad - similar to what previous poster described, thinly-sliced cukes, radishes and a few onions if you so desire. Top with diluted vinegar (i go with about 50/50 vinegar and water) sweetened with a teaspoon or two of sugar. You can serve almost immediately as a side-dish "salad" (serve with a slotted spoon, you don't want all that vinegar-water on your plate).
Cut them up and add to other things - potato salad, tuna salad, etc.

My mom does this thing where she slices the cucumbers really thin (think paper thin with a mandolin), puts them in a bowl, adds some spices (pepper, dil, thyme, etc), and then covers them with vinegar. The last step is the put a heavy bowl on top (to press everything down) and leave it in the fridge overnight. It's good alone, on burgers, or on salad.
