Both of the recipes sounded good, but I don't eat meat so the beans are important for me. I use lots of vegetables. Chopped portabella mushrooms give it a "meaty" texture (I don't like TVP either.) Would he notice if you pureed the beans and added them with some tomato juice or V8?? Best of luck. I love to cook. Last night I made pinto bean soup (lots of veggies and rice added), a great salad with almonds and feta cheese, and an apple crisp for dessert. I live alone so I only cook like that when I have friends to cook for, but I have leftovers of everything for another meal or two by myself.

thanks snoopy1960- I don't like beans either. i am going to try your recipe. sounds yummy!
finely chop darn near any vegetable, add them to the browned meat (or TVP). be sure to include healthy amounts of onion, garlic, green peppers, and tomatoes in the mix. we like corn or hominy. season with generous amounts of chili seasoning. the beans add significant fiber, but you can mimic the effect with other vegs.

I LOVE chili. Ground beef, turkey, chicken, vegetarian, what have you. My Boyfriend, however, refuses to eat beans. He was a boyscout for so many years, frequently eating nothing but canned beans on extensive camping trips, so even the smell makes him feel sick.
Any ideas for a quick or slow-cook chili with no beans?? Any other ingredient is fine!
