I tried the recipe "Spinach Fritatta" tonight. I added a chopped plum tomato and diced frozen peppers and onions to the spinach before adding it to the egg and a tsp of grated cheese to the egg before baking. It was GREAT!

I dont like cooking but since I have been dieting I have started to cook and prepare lots more food MORE then I would have ever liked to. I'm starting to like it and it's not so bad!
