When I do the diet soda cake. I bake it in a 13 X 9 pan. And that is the first layer. After it has cooled the next layer is butterscotch pudding and then a layer of Cool Whip. It stays very moist as the cake absorbs a bit of the pudding.

These cakes are not as moist and do not retain their moisture well. Best use is when the whole cake will be used in one setting.

You can add a 12 oz can of diet pop or club soda to any cake mix.
