I still am going to have a steak that I make at home on occasions. I went to my local butcher and asked for some filet mignon cut into 8 oz. steaks. When I got them home and put them on the scale they were each 12 to 12 1/5 oz. steaks. It wouldnt bother me if I got them from the case and they were even 9 or 10 oz. but going to someone (of course I dont even eat all of the 8 oz. ) specifically to have the fat trimmed and around a certain size. They have always done a great job in the past. Its just nice to have it prepped when order directly.
