I was told that 100lbs is the perfect goal for my height (4 feet 11), I'm now about 125lbs, so I have to lose 25lbs.

Small, obtainable and i wanted to be below the BMI so I am not obese. I am no just overweight funny is that?

My intermediate goal has been 170 for a long time. It puts me smack in the middle of the overweight range. Once I get there, I will reevaluate my goals and what I want to do next.

You don't have to eat the whole thing.

135 to 140. I asked my doctor and he just said that my weight will naturally come into equilibrium now that I am healthier. I think that meant don't worry about it.

I set my goal weight by what my doctor reccomended between 135 to 140 pounds.

I joined SP with the express purpose of getting off of medications. That was basically my goal. Goal accomplished. I did choose a weight goal pretty much out of thin air, after researching the topic I basically found some link that would support my goal of any weight. Doesn't matter if my goal is 140 pounds or 200 pounds. How did you come to the goal weight that you set?
