Have you discovered spaghetti squash? It's quite amazing how the strands come out just like noodles, and they have almost no taste at all, just add your fav sauce and violá! an excellent meal. You can also add spinach to any smoothie and not taste it a bit, start small, a few leaves, then work your way up to a handful. Same goes for cucumber, peel it and throw a slice or two in, you'll never know! Good luck!

Try oven-roasting them. Take some aluminum foil or parchment paper, put some carrots in the middle of it (baby carrots are easiest!), slice a couple cloves of garlic and spread that overtop of the carrots, then drizzle some olive oil overtop and fold up the foil/paper to make a sealed packet. Put it in the oven at 350-400 until the carrots are soft and have caramelized themselves, somewhere around 40-45ish minutes. They're so sweet and yummy that way that it's almost more like a dessert than a vegetable! :)

Slice up carrots, and use hot spicy sea food sauce as a dip.
Its got that crunchieness to the mouth feel and the spicy zesty high flavour impact that makes it like a cheat food, but its low cal and high in nutrients.
I add a can of veggie alls to alot of things like meat loaf ect !

Try them roasted or grilled, which brings out the natural sweetness. Try them in vegetable heavy dishes, like a Chinese stir-fry - where there are lots of veggies that are still whole. That is the only way I really enjoy broccoli, in a stir-fry!

there are lots of veggies i don't care for-i will not eat beets, cauliflower, cooked cabbage, brussel sprouts or any type of beans, to name a few.
think about what you like about the restaurant veggies-try to create a lighter version-or look for a similar recipe on sparkpeople.
there are some good recipes on sprkpeople for veggies. I like zucchini ribbons with lemony breadcrumbs and broiled asparagus-both which i got on sparkpeople.
do you like vegatable, bean or pea soup? what about spinach salad? coleslaw-try making a lighter version? Try marinating veggies for kababs like you would marinade meat.? add some veggies to an omlet? stirfry? pasta, chicken and broccoli with light alfredo or cream sauce? Although probably not the healthiest-some jarred light alfredo sauces only have 60 or 80 calories per serving and sometimes i thin them out with a little bit of chicken broth.
i mix my veggies with other things-like asapargus with tomatos and mozzerella salad. I just go lighter on the cheese and oil.
like others have said, try grilling or roasting.
so you don't feel overwhelemd, start small and then increase. maybe start with a goal for one or two servings a day, and add to that.

I think you need to figure out what it is that you don't like about veggies. For example, I hate mushy ones, overcooked. I found that I love steamed veggies done just right. I love oven roasted or grilled. They can pack so much flavor.
I discovered swiss chard is really easy to cook by sauteeing in olive oil and garlic in a frying pan, then adding salt to it... and it is very tasty.

Keep telling yourself how great they are for you! I'm still not great with veggies but I try to chop them finely and sneak them into dishes. Try adding finely chopped peppers, mushrooms, green beans etc to things you might already make like spaghetti bolognese, lasagne, curries, pasta sauces, pies and even add them to mashed potato. Eventually you will to get used to the taste and texture and will be able to tolerate them on their own. It's all about how they are cooked for me, as other members mentioned, roasting in olive oil and seasoning can be great.
Eating veg raw is another idea. Sometimes it's the texture of cooked vegetables that turns people off so try eating it fresh. Carrot sticks can be great to crunch on.
Many people enjoy roasted veggies. Try roasting a mixture of carrots, parsnips, potatoes, beets and brussels sprouts with a little bit of olive oil and balsamic vinegar and salt until they are soft inside and caramelized on the outside.
Another idea is just to fake it until you make it. If you bring a lunch to work, make up a small baggie of veggies like baby carrots, celery sticks, red bell pepper strips and snow peas for each day of the week, and just tell yourself that you will eat that baggie of veggies as an appetizer to your lunch. You could use some hummus or lower-fat Ranch dip if you can't manage them plain. You don't have to like them, but after a couple weeks of this, I'm betting that you'll start to enjoy them. Make sure you choose fresh, good quality vegetables so you aren't forcing yourself to eat second rate food.

If you are having a hard time actually consuming your veggies, there is nothing wrong with hiding them in soups & sauces. I often do the childish thing of eating the "least favorite" part of the meal first. So if I really, really just don't want to eat my salad or veggies that day, that's what I eat first. I've done this since I was a kid!
Try veggie kabobs! You can do this on the grill or in the oven. Get red potato, bell peppers (green red & yellow), onion & carrot. Cut them into similar sizes (you may want to blanch them first, but I never do), put them on a stick, and stick them in the oven or grill with a little salt & oil sprinkled on them. They are done when there is a bit of brown carmelization on them; turn them once in the middle of cooking if they are on the grill.

I learned later in life to love veggies. I grew up on canned veggies and didn't like them at all. Once introduced to steamed, grilled, etc I was in love. I too try anything new I can find now. But adding them to any dish works, if you must hode them from yourself. Steam, sautee or grill them a bit first.

I hated veggies until I became serious about losing weight. The diet I chose included two cups of veggies at lunch and dinner--total for cups a day. I probably wasn't eating four cups of veggies in a week, which might be why I was overweight! There's nothing wrong with hiding veggies in casseroles, meat loaves, smoothies. What worked for me at first was preparing veggies in new ways. Almost every veggie tastes great roasted. I found veggie recipes with healhy sauces, herbs and spices that covered the taste. Google "cauliflower recipes." Using cauliflower instead of potatos tastes just like hash browns, twice baked potatoes and a lot more. After awhile I made myself buy one new to me veggie a week. Jicama is crunchy when I want chips, Fennel tastes like licorice. I was amazed at what I'd been missing all those years. Now I'm a veggie lover. You can be one too!

All right folks. I admit it. I'm a toddler. I really really really do not like vegetables. I always buy them with the best intentions, but they always end up sitting my fridge until they go rotten. Most of the time when I do eat them, it's because they're hiding in other foods (such as a casserole or sandwich), when they're cooked with fat (butter or cheese), or already processed (like my organic tomato soup) so I don't have to taste them as much.
I always manage to get veggies into a meal when I'm dining out, but when cooking at home they never really make it into my dinner.
Does anyone have some good veggie recipes? Or tips to develop healthier taste buds?
