Good ideas here. I like to stuff celery with low fat cream cheese or peanut butter for a quick snack. I also chop it and freeze in a bit of water so I have it on hand when making a pot of soup.

So far I made a stir fry, miso soup, and spicy asian slaw. I still have a bunch of everything left, mostly the carrots and celery. So need to look for other stuff to make.
Thinking a mexican style slaw with pickled jalapenos, cabbage, carrots and celery to use with shrimp tacos.
I would love more suggestions! This is a ton of celery I have left.

I would make an Indonesian stir fry. Put all but mushrooms in a wok along with diced onions or leeks. Add some soy sauce and some sesame oil. When all is cooked through, add mushrooms. Finally, add cooked brown rice for Nasi Goreng or add spaghetti for Bami Goreng. Both dishes take any veggies you have, but I always include the ones you mention.

My first thought is stir-fry, too, but would also do a shredded salad with the cabbage, carrots, and celery and incorporate the mushrooms in to a ginger sesame dressing for it. Another thought would be to saute the shredded salad, add some hoisin, and put it in to either rice wraps or lettuce wraps for a mu-shu type of meal.
