How about making Irish soda farls. They are easy to make.450g flour,1 teaspoon each of sugar, salt and bicarbonate of soda. 300ml buttermilk or plain yoghurt.
Mix everything together to make a dough and divide into rolls. flatten them to about 1 inch and cook them in a dry flat griddle or heavy base frying pan. (No oil) take about 6 mins on each side. Keep turning as not to burn them.

Parker House Rolls

3 cups all-purpose flour, divided
1 package dry yeast
sugar substitute to equal 6 tablespoons sugar
3/4 cup skim milk
1/3 cup reduced-calorie margerine
1/2 teaspoon salt
2 eggs
vegetable cooking spray

Combine 1 1/2 cups flour, yeast, and sugar substitute. Combine skim milk, margerine, and salt in a saucepan; cook over medium heat until margerine melts. Cool to 120 °to 130° Add liquid mixture to flour mixture. Add eggs. Beat at low speed of an
electric mixer 30 seconds. Increase speed to high: beat 3 minutes. Stir in remaining 1 1/2 cups flour to make a stiff dough. Turn dough out onto a lightly floured surface. Knead until smooth and elastic (about 8-10 min.) Shape into a ball;place in a bowl coated with cooking spray, turning to grease top. Cover and let rise in a warm place(85°), free from drafts, 1 hour or until doubled in bulk. Punch down;cover and let rest 10 minutes. Roll dough to 1/4 inch thickness; cut with a 2-inch biscuit cutter. Make a crease across each circle, and fold one half over, gently press edges to seal. Place rolls on baking sheets coated with cooking spray. Cover and let rise in a warm place, free from drafts, until doubled in bulk. Bake at 375° for 15-20 minutes or until lightly browned.

Does anyone know of a healthy recipe for dinner rolls? I can't seem to find a good one.
