I love this thread! Great suggestions! We also like making "Egg McMuffins" on the camp stove with whole grain English muffins, eggs, and some back bacon (it's pretty lean).

We used to make bean burritos in the campfire. You could roast some veggies or add grilled steak or chicken slices as well.

Anarie - that makes a lot of sense. Wer're headed to Yellowstone in a few weeks and I've been toiling over the menu for 5 people for 9 days. I'm going to try your system. By the way - does anybody have opinions on choosing a great camp ground/site at or around Yellowstone?? THANKS!
I've found that the easiest way to plan something like this is to take it in two separate steps. First, make a list of healthy, tasty things you would like to make if you were at home. If you need 9 meals, list 12 or so. THEN look at your list and see if there's anything on it that you can't cook over a camp stove or fire, or cook before you go. If you try to think about health, taste, AND cooking method all at once, you tend to get overwhelmed. If you do the creative part of planning first, then when you start thinking about cooking, the creative part of your brain is free to work on that. You'll find yourself saying, "Oh, yeah, of course we can do that without an oven; we can just wrap it in foil." It turns out that you can figure out how to make almost anything if your mind is free to work on it.

I like the Al Fresco chicken sausages that are like brats and they are good to cook over the fire.
thanks for the yummy ideas we don't have an oven so we try to keep things to the slow cooker and grilling (on the BBQ) and some cooking direct on the fire I am definetly going to try the chicken sausage (we already like a chicken/apple breakfast sausage that is on the "light menu" from our grocery store) so we are going to try chicken/turkey smokies or hot dogs and Hebrew delight hot dogs -- I think I see a taste off this weekend also foil wrapped food is always good
The healthiest hot dog on the market that I know of is the fat free Hebrew National dog which has no presevatives, no fillers, no nitrates...about 40 calories a dog too! Pair it up with thinly sliced cucumbers, thinly sliced tomatoes or even 2 tbls of sauerkraut with a dash of celery salt..yum.
Baked beans are high in sugar and adding the brown sugar doesn't help either...maybe try a chickpea and tomato salad or a black bean salad for a healthier alternative. How about a broccolli salad?
Tacos are good too and kids love to fill their own...take along the shells, BBQ some chicken strips or mild fish, Put shredded lettuce, cheddar cheese, onions, tomato's, olives into seperate bowls on table. Also include containers of salsa and sour cream and guacamole on table even matchstick carrots, salsa. You can even make tuna tacos.....
Grill shrimp for kabobs and roast veggies in a tin foil packet with some oilive oil and herbs or Cook your shrimp in beer in a pot and add lemon or lime.....kabobs are great with cherry tomatoes, green, red, yellow peppers, onions...or try chicken kabobs or pork kabobs...use wooden skewers ...soak skewers in water so they dont burn
Sweet potato wedges are crispy fabulous side for grilled burgers. Plus, they're a healthy alternative to greasy, fatty french fries. Maybe with pork chops ...Grill chops 8 minutes on one side, 7 minutes on the other and then add a dollop of ketchup and a dollop of sour cream ontop and grill an additional minute.
Roasted Apples Toss unpeeled apple wedges into a little olive oil, pinch of salt and a pinch of thyme. Spread on tin foil and grill for 30 minutes....serve as a snack or with turkey, chicken, pork, or beef.
You can take garbanzo beans and ligtly coat them with cinnamon and grill in tin foil for about ten minutes...kids love them as a snack.....take along applesauce cups as a snack....
Make Air popped popcorn to take with for a snack as popcorn is loaded with vitamins and minerals, add a little cinnamon for flavor...
Graham Crackers for the kids with some peanut butter or almond butter.....Almond, walnuts, pecans
To answer your hot dog question, I've had success with the Hebrew National brand. They are tasty.

We're going after the long weekend when we get the park all to ourselves. ;)
I'm baking some oatmeal blueberry flaxseed muffins. Oatmeal Yogurt Omelettes with veggies. Cottage cheese (if you bring some plain oats, eggs/egg whites you can make cottage cheese and oat pancakes) Tuna salad/wraps with veggies and apples. Egg salad sandwiches (w/avocado and greek yogurt instead of mayo) Peanut butter and fruit toast Healthy burrito filling (make ahead of time with chicken/turkey or veg like butternut squash and black beans) Salmon/other fish beans (plain without added salt) Homemade ground turkey or chicken burgers Chicken breasts veggie and/or meat/veggie kabobs Cut up veggies/fruit platter Sweet potatoes Corn on the cob popcorn trail mix homemade granola bars
"Toning" is marketing muscles to women who are afraid if they pick up a barbell, they'll leave the gym looking like She-Hulk. It doesn't happen, what does happen is you get results. Lifting Barbie weights does nothing but waste time.

I camp about every other weekend if possible, just me and three kids. I take a lot of dehydrated food. You can do this yourself or you can buy it. It makes for easy meals. Here are some common camping foods for us. We eat a whole foods diet, not low fat/low calorie/low carb or whatever so you may need to adjust these
Breakfast burritos - use turkey sausage, scramble eggs, add peppers, onions, whatever veggies you like. wrap in tortillas with salsa
dehydrated black beans and dehydrated rice - add boiling water to rehydrate and then grill your chicken or whatever protein you like to go with this. Add veggies and full meal
Camper Stew - each person mixes ground meat (chicken, turkey, beef etc) and vegetables (carrots, celery, onion, potato, etc) into foil packet, bake these for half hour in the coals. Add seasonings or sauce as desired.
Cut apples in half, core them, drizzle with honey, sprinkle with cinnamon, wrap in foil and place in coals for 20 minutes - bakes and becomes delicious.
Dehydrated fruits mixed with nuts, sunflower seeds, coconut, carob or other desired items for trail mix
popcorn popped over a fire with paprika, nutritional yeast, garlic powder
We are going out to the cabin for May Long Weekend (Victoria Day = Canadian holiday). All the adults are trying to eat better but we know that making things out at the cabin is not always easy. The one thing we have agreed on is no potato chips. My husband and I love to cook over the fire at least one smokie or hot dog during the week. Do you know of a healthier (low salt, low fat) hot dog or smokie (we do not eat tofu)???

We are going to have vegetables and a healthier homemade veg dip available for snaking . Fruits and plain Greek yogurt for breakfast (one day we are going to have bacon and eggs from over the fire). There is always lots of fruit (apples, oranges, grapes, watermelon, plums, etc). There will be big green salads with oil and vinegar on the side. We will make out half veggie/half beef burgers for at least one dinner.
