I like to change the traditional Thanksgiving dishes with a new twist. I now make a tofu pumpkin pie that uses tofu instead of cream and eggs. I also roast the green beans in a 450 degree oven after tossing with a tablespoon of olive oil and chopped garlic.
I will be cooking a Thanksgiving dinner but only myself, my husband and I attending. My son likes turkey, mashed potatoes, gravy and maybe a little stuffing. Doesn't care that much for dessert so I will forgo that except maybe a fruit salad. Will not make the green bean casserole that I love. He likes it, but eats very little so leaving it out. Husband is a vegetarian so will have a big salad, too. Anyway, cutting the fat where I can cause I will not gain weight for Thanksgiving! I amy indulge a bit, but I know what to do to survive!
