Grilled pineapple is a fave at our house. I began by coating it in butter and brown sugar.....but now we are eating healthier, and even the kids dont miss the extra fat and sugar. It is a delicious side for chicken.

I love the italian dressing marinated veggies on the grill. I found a recipe for Bourbon Porkloin on SparkRecipes that you grill. It is SO GOOD--even though I make it w/o the bourbon. You marinate it all day. On the grill you sear the outside, then let it cook 15-20 minutes. You can also do PIZZA on the grill. Shape a 6" size crust, cover both sides in olive oil (or spray w/ olive oil cooking spray) slap it on a med/med-high grill (indirect flames is best) for 1-2 minutes until it starts to get puffy and soft looking. Flip over for another minute. You can then add the sauce and toppings then but I find it easier to remove the crust, do the toppings then put it back on the grill. Shut the lid until the cheese is bubbly. YUM!

My family lives to BBQ - and living in AZ makes it possible most of the year. Our favorites are defiantely chicken breast marinated in anything your taste buds enjoy; veggies (I don't marinate those); kabobs are always a fun thing to get the kids involved with - it lets the creativity flow; of course ribs after they've been cooking in beer for at least 3 hours (makes them fall-off-the-bone tender!!) The potatoes in foil is a favorite! Throw in some margarine and favorite spices, wrap it up and throw it on the grill for a new side dish. Good luck and enjoy trying something new.

Grilled pork chops! For a sweet twist, serve with peach or mango salsa. Grill any meat, then put on a sandwich. For example, grill a steak, cut into thin slices, and then put on ciabatta with lots of veggies and maybe a little sauce. Grilled quesadilla! Much more flavor than one cooked on the stove. There are fairly healthy quesadilla recipes out there too, if you look for them. I want to second the grilled veggies. You can do this a lot of ways - grilling directly so they get the lovely marks, grilling in tin foil for slower cooking, grilling in tin foil with olive oil (with or without seasonings). If you grill bell peppers, you can use them in a ton of things. With some grills, you can use hickory, cedar, apple, or other wood chunks to get different flavors. You can grill fish for sure. I bet even the cheap tilapia that I always buy would be alright grilled, but you can get a big piece of salmon or whatever you like I've actually been planning to buy a grill today! So I'm super excited to try everything with you. Tomorrow's our first grilling session, and it's going to be a juicy chicken breast with mixed veggies and olive oil in tin foil
