Your dinner does sound great!! I love to use Greek yogurt in place of sour cream on my potatoes. Sometimes I even use lowfat cottage cheese on a potato with Mrs. Dash salt free seasonings. It is sooo filling!!

My favorite go-to simple dinner is whole wheat spaghetti with store bought jarred sauce- Newman's Own Sockarooni. It is delicious, filling, healthy, and sooo easy. If I do not want pasta, then I microwave a whole chicken in my Pampered chef stoneware baker, and the chicken is tender and juicy. Cook some rice, or boxed couscous and some veggies, and dinner is ready.
Hummus is very good. In fact, when I entertain or bring dishes to get togethers or parties I often bring a tray that includes tzatziki and hummus. Try the different flavors. So high in fiber and delicious!!
If you like greek yogurt have you tried making a tzatziki sauce? You can google for a recipe but it's a great fat free or very low fat add on for meals. You can use it as a condiment or as a dip with veggies.
Ingredients are pureed or finely diced seeded cucumbers, garlic, a touch of olive oil, fresh dill and lemon juice. You can eliminate the oil but I think it gives something to the body of the flavor and is worth the negligible amount of calories/fat it contributes.
It's delicious, fresh tasting and a great compliment- gives you a dairy and helps you to eat your veggies.
I just had the most satisfying perfect dinner, I could not feel fuller, happier, or more filled with deliciousness. It was soooo easy too. I finally wanted to try using Greek Yogurt instead of other stuff in mashed potatoes. It was awesome! I ate chicken cooked in a little barbecue sauce, with mashed potatos mixed with one tablespoon of greek yogurt with about .5 tbsp's light butter, and i had a handful of green beans on the side. This meal was 429 calories, 46 carbs, 7 grams of fat, and 41 grams of protein! Im at 1300 calories, and am under the minimum of my fat by 3 grams, looks like I get to find something yummy to eat a bit later! Anyone recceomend any other simple satisfying dinners?
