Oh, almost forgot my all time FAVOURITE salad. I ate this for lunch nearly every day when I vacationed in Italy several years ago.

Caprese Salad:

Start with slices of Buffalo Mozzarella, then top each slice with a really good tomato slice, then top each with a basil leaf or two, and then season with a little salt and a drizzle of olive oil. Some people also like to drizzle a balsamic reduction over it.


FYI...the key to this tasting excellent vs. just "good", is in the buffalo mozzarella and those tomatoes! Italy has amazing tomatoes...and naturally, a good quality olive oil doesn't hurt, either.

Yum, yum, yum...I'm making myself hungry now...

Russell- you can mix up your own ranch dressing with greek yogurt and powdered ranch dressing- MUCH healthier and you can indulge with the dressing all you want! :)

The other day I had Romaine which I tossed with oil and vinegar then added:

parmesan cheese
3 ozs diced chicken breast
1/4 a red onion
1/4 cup black olives
diced tomato

I don't eat fruit, but my brother added mandarin oranges

I find that salad is great. I just eat them less, since discovering I liked ranch dressing, more than most The salads are healthy, but the wrong dressing can ruin the dish calorically. I also find that by mixing the greens beforehand, I use less dressing than if I pour it over the top.

Chopped romaine lettuce
Sliced red cabbage
Large Fuji apple, halved, cored, diced
Asian pear, halved, cored, diced
Fuyu persimmons, peeled, seeded, diced
Pomegranate seeds

For the dressing:
Red wine vinegar
Hazelnut oil

those sound great! i recently did one with butter lettuce (a coworker grew too much and brought me some!), raw kale, avocado, mango, cilantro, a little grated romano, and grilled chicken. I was happy just with lemon juice and black pepper because the other ingredients were so flavorful!

This does sound good. I've never been a huge one for adding fruit to veggie salads, but I'd definitely try this one.

I had a great one today with chopped apples, feta cheese, grilled chicken and sunflower seeds on a bed of spring mix with a light vinegar/oil dressing. Very tasty.

Spinach leaves, strawberries, almonds, avocado, grilled chicken tenders, balsamic vinegar...I was tasty and fulfilling.
