I love zucchini. I love it grated in a salad or in a home made chicken wrap along with tomatoe and salad greens , the zucchini adds moistness to the wrap . Also . I cook it up in the rice cooker with lentils organic vegtable broth , chopped up red peppers&red onions. It is sooo good :) . Happy cooking :)

I put all the ingredients into the food tracker and came out with 478 calories if you eat all 3 zucchini !!!!!

So maybe divide up the finished product and figure it out that way ???

ZUCCHINI FRIES

3 zucchini
1/4 cup parmesan cheese
1 cup whole wheat bread crumbs
1 egg

HEAT oven to 450F.

Peel zucchini, cut lengthwise and take out the seeds.
Cut into matchlike sticks.

Mix cheese and bread crumbs in a big bowl

Mix egg in a bowl

Dip zucchini to the egg, then add to the bread crumb mixture to coat

Place on a cookie sheet that you have sprayed with Pam

Bake 7 minutes then turn them over
Bake another 7 minutes or until golden brown,

Dip in fat free ranch dressing

To make spicy fries add 1/4 teaspoon of cayenne pepper to the bread crumb mixture.
