Low budget: canned salmon/tuna, frozen fish fillets, frozen vegs, fresh in-season vegs/fruits, eggs, olive oil. (if any $ left: upgrade to organic veg/fruit, grassfed beef, organic poultry)
Lower budget: canned tuna, frozen veggies, fresh in-season vegs/fruits, eggs, EV olive oil.
Lowest budget: I suggest rice, beans, lentils, and frozen vegs/fruits. (tuna cans if possible)

yes, beans, lentils, and rice are a good way to go. almost every week, i make a pot of brown rice to eat from for the week. about every other week, i do the same with lentils. i usually go for canned beans (try to get them w/out salt), though. always have those on hand. inexpensive fresh veggies such as broccoli and mushrooms. frozen veggies are not bad. eggs.
just be creative. use lots of spices to make things more interesting. use your nose. mexican, indian, and asian recipes can often be made healthy, and on a tight budget.

I have found to make a really easy veggie soup in my crock pot. I buy the frozen bag of "veggies for soup", brown up a 1/2 pound of ground beef (or turkey if you want), depending on how much broth you like between 1-2 cups of low sodium chicken broth, and 1 cup of water. Shake some season salt, and no salt garlic herb seasoning (this works great on SO many other things too) put in crock pot for 4 hours. makes about 3-4 med sized bowls of soup. sometimes I save it and have it throughout the week. Perfect for these cold days.

Uncle bens original wild rice box, 1 can of cream of chicken or cream of mushroom soup, 1 cup of water, about 3/4 of the packet in the wild rice box mix all of this together and pour into a 9x13 pan (i use a glass one) place 3-4 pieces of thawed chicken breasts on it, then sprinkle the remaining seasoning packet on the chicken. Bake at 350 for about 40-50 min (until chicken is done) SO EASY and good.

There has been a number of threads here about this subject, just do a search for "budget cooking" or stuff like that.

But, what kind of budget are we talking? $50/week? $150/month? Everyone's definition of "cheap" is different :)

Also, one of my favorite blogs is Everything I've made from there has been really delicious, and while she doesn't provide nutritional info, I end up building the recipes in the recipe builder and most of them end up fitting right in with my eating plan, even when I eat bigger portions than she calls for.... like she'll say something makes 6 servings and I'll make it as 4. That sort of thing.

Dried beans are cheap. I love lentils and chickpeas. I make daals with them and serve with brown rice.

Hello all. I am just comming out of college so I have little money, and gained about 30lbs. I am currently trying to eat healthy on a small budget. The hardest part? I have to cook for two. I met my fiance in college and I have to say... I tend to cook a lot better, but it is hard everyday to come up with healthy, proportioned meals for two on a low budget. Any suggestions would be awsome!!
