The suggested menus are garbage unless you honestly have no restrictions or finickiness. (What are you supposed to do with egg yolks? I guess it's either feed them to someone or make a cookie that only wants the yolk and feed the cookies to someone.)
The better option is to turn those off and either meal-plan with them or passively track until you know enough about your food to know in your head what you want to eat.
I am gluten intolerant also and I do not use the diet meal plans. You can sub brown rice and Quinoa pasta for any pasta listed. What are you having trouble substituting? I don't care for the food that is listed on the plans, so I do my own thing and measure and count calories.
