Oh my goodness! I'm so glad to have found this message board!!! I've been needing/wanting to go this direction for a long time, but haven't wanted to commit because I already don't know anything about cooking good meals let alone going dairy and wheat-free. I've managed to mostly go dairy-free, but I still use cheese on things on occasion. I'm allergic to wheat (tummy & respiratory issues when eat too much, but no noticeable effects when have in moderation). I'm not sure if this is what's keeping me from dropping pounds or what's going on, so I want to give it a shot.
Anyone have a good cook-book with simple meals (4 to 5 ingredients) and easy to put together? Most of what I find has 7 to 10 ingredients and 1) buying for that is way outside of my food budget and 2) it's intimidating and stressful. As I said, I don't really know a whole lot about cooking meals, not even the steak & potatoes I was raised on, so I need all the help I can get.

Hi I'm looking for recipes for the bread machine that work in a regular non programable machine. Plus it needs to be gluten free and I use almond milk. tough request but hope someone will have an answer. I have arthritus and fibromyalgia so it is hard to make bread the convential way. Any help would be appreciated. Plus how do you make pasta without a machine? Lucinda
I have been dairy and gluten free for a few years now. I have lots of recipes in my SparkRecipes page under millersimpson. I also have several raw food recipes and many of my most recent recipes are vegan. Check them out and let me know if you have any questions - I have most of them marked DF/GF or Vegan - there is a variety for omnivores too. :) I would suggest the Peanut butter cookies if you need a sweet treat.
Thank you for the spunkycoconut reference! They have a facebook page as well. We've become gluten and dairy free (plus no egg-whites) in the past two weeks so needless to say we've been combing the internet!!

Just got a book called 'wheat belly'. anyone familiar with it? The driving point in the book is that the wheat has become so altered by constant manipulation of the farmers that it is no longer healthy for us. Good read, has a lot of recipes in and some other very interesting information.

I know this is an old topic but I'd thought I'd share some of the foods I've recreated to be gluten and dairy free. I've even come up with a coconut milk cheese for pizza, mac & cheese, alfredo etc. Some of these are not exactly diet foods, but I've tried to do them with a healthier spin..and considering I'm down almost a 100 pounds, I'm the poster child for enjoy food, small portions... NO guilt :) I'm working on putting recipes with the pics but if there's anything you'd like more info on let me know.

Any new diagnosis you are ususally kind of sick and sore tummy - Encourage you to start out gently - plain banana, rice, applesauce, toast - the first toast might be UDI's - sticker price might be a shock but it is the BEST on my humble opinion and might have to go to health food store to get it if rual america, but many Walmarts and mainstream stores are carrying it now. then gradually add plain meats, fruits and veggies. Second step might be to get Betty crocker gluten free bisquick and cake mixes, lots of options of grains and the like but pricey - choose your favorite three recipes and see if you can change them slightly and be gluten free. With time and experience you will learn this and find you can change just about anything to GF and CF. Be strong and of good courage!
