Farro is a whole grain, similar in taste and texture to barley. Couscous is a pasta made of refined flour. The Israeli couscous is very tasty IMO, and it makes a very pretty pasta salad, but it's no more nutritious than macaroni.
Can anyone give me a comparison (flavor, texture, preference) between farro and Israeli pearl couscous? I've been trying out all these new healthy grains--just had farro for the first time today and was interested in the pearl couscous next! Thanks!
