Fresh veggies taste a lot better than canned or even frozen. Don't overcook them! Green vegetables should still be bright green not grayish. Try roasting veggies (any kind) with a little oil---or bacon grease! Also try cauliflower rice: where you finely chop cauliflower and add it to stews and soups in place of rice.

Try all kinds of new veggies if you haven't yet. There are SO many different kinds out there that there would have to be something you like. I love the soup idea because you can "cover" them up with all kinds of great flavors if you don't really like them.
I have been roasting veggies for the past few weeks and love them. They take on a slightly nutty flavor when roasted. Eggplant, zucchini, onion and peppers have been my go to. I ususally just spray the pan with cooking spray and put them in a single layer, top with salt, pepper and garlic. 450 degrees for 15-20 minutes, I usually flip them once. I've made a veggie lasagna with them and it was delish.
